How We Do It
The process involves sample collection from the field (leaves) and olive oil from key supply chain points. The results, coupled to relevant production data, are processed using an AI/ML aiming to create a “digital DNA fingerprint”. The “DNA fingerprint” of the bottle of EVOO will be accessible to a consumer via a QR code on the bottle.
